VIII Week of Italian Cuisine in the World | Italian cuisine workshop: autumn risotti

Come learn the secrets to cooking an authentic risotto with Valentina Cattero, gastronome, teacher at the Italian Cultural Institute of Montreal and doctoral candidate at Laval University. You will get your hands dirty in the INAF educational kitchen in this evening open to all where you will prepare delicious traditional and seasonal recipes.

At the end of the activity we will taste them together in a friendly atmosphere, while Valentina will tell you how the popularity of rice, in the first place, and that of the risotto recipe, subsequently, evolved in Italy in the 19th century

Valentina Cattero began her career with a bachelor’s degree at the University of Gastronomic Sciences in Bra, Italy, which she obtained in 2016 with a dissertation on the use of wild plants in traditional gastronomy. In 2017, she obtained a master’s degree in Natural Medicinal Products at University College London, and in 2018, she began a doctorate at Laval University on the effect of cranberries on the intestinal microbiota and human health. She collaborates with different organizations to design and lead culinary and educational workshops, such as INAF, the “Aliments d’Ici et Saveurs d’Ailleurs” association or the CEPIA clinic, and for the past year, she has been working for the Italian Cultural Institute of Montreal as a gastronomy teacher, providing theoretical courses and practical workshops.

A showcase for Italy and Italian taste in the world, the Italian Cuisine Week, this year in its eighth edition, is an annual initiative developed to promote Italian culinary traditions and food and wine knowledge as a distinctive feature of identity and of Italian culture. This year’s initiatives will have the theme At the table with Italian cuisine: il benessere con gusto.
